Founded in 2005, Kilchoman was the first new distillery to be established along the shores of Islay in almost 125 years – established with the intention of redeeming the grass-roots tradition of farm distilling. Kilchoman prides its philosophy of creating “Islay’s only Single Farm Single Malt”, processing the dram from barley to bottle, at the site itself.
The barley comes from 400 acres of fertile landscape surrounding the Kilchoman Church, while their unique malting, peating, and distillation imparts a distinct local flavour. The maturation takes place in bourbon barrels and sherry butts, balancing their classic peat smoke and floral sweetness. Finally, the ready malt is bottled at the distillery, completing its journey from farm to fable.
A family run business – Kilchoman Distillery is operated by Anthony Wills and Kathy Wills, along with assistance from their sons James, George and Peter – perfectly resurrecting the age-old culture of Single Farm Distillation.
